У статті досліджено поняття витрат, їх економічний зміст, визначено фактори впливу на витрати підприємства в Україні. Досліджено ряд класифікацій витрат, що запропоновані різними авторами, визначено їх особливість. Наведено основні шляхи оптимізації витрат підприємств. Запропоновано авторську класифікацію витрат. Наведено основні напрями оптимізації витрат підприємств України. Відповідне дослідження дасть змогу вирішити низку проблем зі зменшення витрат для підприємств молочно-консервної галузі та інших галузей національної економіки.
