Статтю присвячено дослідженню проблемних питань кондитерської промисловості. Розглянуто виробництво цукру и пшеничного борошна в областях України за 2013-2024 рр. Проаналізовано показники цукрової промисловості: врожай цукрового буряку (площа, врожайність, врожай), виробництво цукру (виробництво, споживання, експорт, імпорт) за 2013-2024 рр. Досліджено ринок цукрової і борошномельної промисловості. Проаналізовано економічні показники основних виробників цукру і борошна. Встановлено вплив середньомісячної ціни на борошно і цукру на виробництво кондитерських виробів. Обґрунтовано вплив ціни сировини, сезонності, кліматичних умов на вартість кондитерських виробів. Розглянуто вплив сезонності на обсяг виробництва. Запропоновано продовжити спостереження і дослідження за факторами впливу на кондитерську промисловість і розробити модель операційного планування виробничо-господарською діяльністю промислового підприємства.
